Learn How To Make Delicious Braised Chicken That’s Perfect For Fall


As a self-taught cook who feels pretty confident in the kitchen, there are still a few culinary terms that intimidate me. These include words like brûlée and confit — and even shuck makes me uneasy.

Braising has always been another one of those terms that when I see it in a recipe, my eyes glaze over, and I skip to another dish that seems easier to make, like meatloaf made in a muffin tin.

4 lbs. assorted chicken pieces with skin (breasts, legs, and thighs)
3 Tbsp. extra-virgin olive oil
5 carrots, peeled
1 yellow onion
2 lbs. mushrooms, cleaned
3 cloves garlic, crushed
3/4 cup balsamic vinegar
1/4 cup red wine vinegar
1/4 cup apple cider vinegar
2 cups chicken broth

Season chicken with salt and pepper.
Heat olive oil over medium-high heat.
Brown chicken in batches. Once brown, set side.
Cut carrots and onions then sauté them in pan with chicken drippings.
Add mushrooms and cook for 6–8 minutes.
Sauté with crushed garlic for 2 minutes.
Whisk vinegars together and then add them to vegetables until smooth.
Cook for 3-5 minutes, then slowly mix in chicken broth.
Then add chicken, cover the pot, and let simmer for 40 minutes.
