Thanks to a restaurant in Stockholm called Hasselbacken Restaurant, we have a delightful method of preparing foods with goodies stuffed into accordion-like slices. It infuses every bite with tons of flavor.
Traditionally this has been used to make decadent stuffed potatoes, but we’re going to show you a method to make chicken in the same way.
We were inspired by the Italian flavors of tomato, basil, and mozzarella, and the results are spectacular. Italy meets Sweden meets our American kitchen. It’s an international triumph.
What You’ll Need:
- 3 chicken breasts
- 2 large, ripe tomatoes
- ½ cup fresh basil leaves
- ½ lb mozzarella cheese
- Olive oil
- 1 tsp Italian seasoning
- Sea salt
- Fresh ground black pepperWhat You’ll Do:Preheat your oven to 400 degrees.
Cut thin slices of mozzarella. Slice your tomatoes thinly, too. Take the basil leaves off the stem, but leave them whole.
Lay out the chicken breasts. Using a sharp knife, cut slits in them crosswise without slicing through. In each slit, cram in a slice of tomato, a slice of mozzarella, and a leaf of basil.
Lay the stuffed chicken breasts on a baking sheet and drizzle with olive oil, and then sprinkle with Italian seasoning and salt and pepper to taste.
Slide your Hasselback Chicken into the oven for 30 minutes. All the flavors will meld beautifully. Serve with some crusty Italian bread. Viva Svenska!
