Potato skins are a delicious appetizer, especially when they are topped with bacon and cheese. Yet, they hardly compare to the scrumptious recipe below.
The host of the web series BBQFOOD4U, Jason King, has shown us how to make bacon, egg, and sausage breakfast balls as well as salmon bites. But, here, he’s cooking up what he calls a “volcano potato,” which oozes with sauce and is wrapped in crispy bacon.
Aside from a grill, apple corer, toothpicks, and aluminum foil, here’s what you’ll need to make this hearty meal:
- 2 potatoes
- 8 slices of bacon
- 4 slices of smoked turkey
- 1 cup of grated cheddar cheese
- ½ cup of sour cream
- 1 Tbsp of hot sauce
- 2 Tbsp of diced green onions
While you cook the potatoes on the hot coal for 20 minutes, start making the “volcano sauce” using your favorite hot sauce.
Once the potatoes are cooked, it’s time to use the apple corer to make the potato hollow. Of course, that’s where all the cheese and turkey stuffing will go.
Then wrap the potatoes with bacon – make sure to pay attention to King’s neat trick at the 4:35 mark.
Finally, you place the potatoes on the grill and let them cook for roughly 40 minutes. And, just wait till he cuts the potatoes look like when King cuts them open at the end.
