In the middle of summer we are always looking for no bake desserts that satisfy our sweet tooth without weighing us down – or heating up the kitchen! These Strawberry Pretzel Squares are refreshing, cool, crunchy, and sweet.
They are the perfect way to use perfectly ripe berries. Even if it’s not mid-summer, you can make this dessert any time of year and it will feel like summer all over again. We promise that this sweet treat will take you to your happy place every time.
What You’ll Need:
- 2 ½ cups salted pretzels
- ½ cup (1 stick) unsalted butter
- ¼ cup plus ½ cup sugar
- 8 oz cream cheese
- 8 oz cool whip
- 2 cups water
- 1 package strawberry Jell-O
- 1 lb sliced fresh strawberries
- What You’ll Do:
Put the pretzels in a large plastic bag and crush them with a rolling pin until you have pretzel crumbs. It’s nice to leave some a little chunky for added crunch. Melt the butter in a saucepan, stir in ¼ cup sugar, and then the pretzels. Mix it all up! Press the sweet buttery pretzel bits into an 8”x 8” baking dish, or into a pie plate. Set aside.
In a medium bowl, combine the cream cheese, ½ cup sugar, and cool whip. Use a beater to whip it up until it’s fluffy. Spread it over the pretzel base in an even layer. Set aside.
In a saucepan, heat the water and then stir in the strawberry Jell-O until dissolved. Remove the Jell-O from the heat and stir in the strawberries. Very gently, pour the strawberries and Jell-O over the cream cheese layer. Try to scatter the berries evenly. Freeze for 2-3 hours.
Serve in slices and enjoy it with people you love.
