Veggies In A Slow Cooker Make A Perfect Meal After The Chicken Goes On Top

Chicken soup is a classic you crave all year long. But instead of reaching for a can next time, try this super easy slow cooker recipe instead. It’s packed with protein, fresh veggies, and the satisfaction that it’s been steeping in your kitchen all day long.
The ingredients are household items, and you can let this soup cook all day long while you’re at work – or whip it up in the afternoon before dinner.
4 potatoes, peeled and diced
4 carrots, peeled and sliced
2 brown onions, diced
4 sticks of celery, sliced
4 cloves garlic, crushed
2 large boxes of chicken stock
1 pkt French onion soup
6 chicken thighs whole, trimmed of all fat1
Getting started:
1. Place your potatoes, carrots, onions, celery, garlic, into the crock pot (in that order)
2. Mix your french onion soup with your chicken stock in a large bowl, then pour it in over the veggies.
3. Take your chicken thighs and push them under the liquid, and into the veggies. Cook on high for 4 hours, or low for 8.
4. Remove your chicken from the slow cooker, shred it, and put it back in the pot and stir.
5. Serve in a bowl, and sprinkle fresh parmesan cheese and a little parsley on top. We also suggest serving this dish up with a crunchy piece of french bread smothered in butter.
