On a busy weeknight, we need a meal that will bring us all to the table to reconnect. We don’t want to fuss with an elaborate presentation, and we don’t want to worry about grumbling from picky eaters. We think we’ve come up with a dish that will make everyone happy. You could call it a recipe for family harmony.
Nothing says comfort food like a cheesy pasta dish, right? This Cheddar and Chicken Penne combines chicken breasts with tomato sauce and pasta, and sprinkles cheese over the whole thing. It’s zesty, cheesy, and it’s made in the slow cooker!
What You’ll Need:
- 3 chicken breasts
- Sea salt
- Fresh ground black pepper
- 1 28 oz can crushed tomatoes
- 1 Tbsp garlic powder
- 1 cup diced onion
- ½ tsp red pepper flakes
- 1 Tbsp dried basil
- 1 Tbsp dried oregano
- 1 Tbsp dried parsley
- 1 lb dried penne pasta
- 1 cup shredded cheddar cheeseWhat You’ll Do:Salt and pepper the chicken breasts and place them in the slow cooker. Pour in the tomatoes, onions, and all the herbs and spices. Give the whole mixture a slight stir while still leaving the chicken at the bottom, and cook on high for 3-4 hours.
When you’re getting near the end of the chicken cooking time, boil a large pot of salted water and cook the penne until it is al dente. Don’t overcook it– the penne will spend a little time in the slow cooker, and you don’t want it to get mushy. Drain the pasta.
Take the chicken breasts out and shred them, then return the shredded chicken to the slow cooker with the cooked pasta. Sprinkle with the cheddar cheese, and cook in the slow cooker on high for 15-20 minutes.
